Ingredients
  

For the Blackened Tilapia
  • 8 tilapia fillets
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper adjust to taste
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste
For the Pineapple Salsa
  • 1 cup fresh pineapple diced
  • 1/4 cup red onion finely diced
  • 1/4 cup red bell pepper diced
  • 1 small jalapeño seeded and minced
  • 2 tbsp fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste
For the Tacos
  • 8 small corn or flour tortillas
  • 1/2 cup shredded red cabbage optional, for crunch
  • Lime wedges for serving
  • Extra cilantro for garnish
Optional Add-Ins
  • 1/4 cup crumbled queso fresco or feta for a creamy tangy topping
  • A drizzle of crema or sour cream for added creaminess

Method
 

Prepare the Pineapple Salsa
  1. In a medium bowl, combine the diced pineapple, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt.
  2. Stir well and adjust seasoning as needed.
  3. Set aside to let the flavors meld.
Season the Tilapia
  1. In a small bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
  2. Pat the tilapia fillets dry with a paper towel, then rub them generously with olive oil and the blackened seasoning blend.
Cook the Tilapia
  1. Heat a large skillet over medium-high heat.
  2. Once hot, add the seasoned tilapia fillets.
  3. Cook for 3-4 minutes per side, or until the fish is cooked through and has a nice blackened crust.
  4. Remove from heat and let rest for a few minutes before flaking into bite-sized pieces.
Assemble the Tacos
  1. Warm the tortillas in a dry skillet or microwave.
  2. Place a few pieces of blackened tilapia onto each tortilla, then top with a spoonful of pineapple salsa.
  3. Add shredded red cabbage for extra crunch, and garnish with extra cilantro and a squeeze of lime juice if desired.
