Ingredients
  

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 medium cucumber diced
  • 1 medium red bell pepper diced
  • 1 medium red onion finely chopped
  • 1 handful fresh parsley finely chopped
  • 1 handful fresh mint finely chopped
  • Juice of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Feta cheese optional

Method
 

  1. Combine the chickpeas, cucumber, red bell pepper, red onion, parsley, and mint in a large bowl.
  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
  3. Pour the dressing over the chickpea mixture and toss until everything is well coated.
  4. If desired, crumble some feta cheese over the top before serving.
