  • 2 tablespoons honey or maple syrup adjust to taste
For the Matcha Layer
  • 1 cup Greek yogurt plain, unsweetened
  • 1 tablespoon matcha powder ceremonial grade for best flavor
  • 2 tablespoons honey or maple syrup adjust to taste
For Assembly
  • 1 cup granola your choice of flavor
  • 1 cup fresh berries strawberries, blueberries, or raspberries work well

Method
 

Prepare the Chocolate Layer
  1. In a medium bowl, combine the Greek yogurt, cocoa powder, and honey or maple syrup. Mix until smooth and fully incorporated. Set aside.
Prepare the Matcha Layer
  1. In another medium bowl, combine the Greek yogurt, matcha powder, and honey or maple syrup. Mix until smooth and fully combined. Set aside.
Assemble the Parfait
  1. In four parfait glasses or bowls, start with a layer of the chocolate yogurt mixture at the bottom.
  2. Add a layer of granola over the chocolate layer.
  3. Next, add a layer of the matcha yogurt mixture.
  4. Top with a handful of fresh berries.
  5. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
Chill and Serve
  1. Refrigerate the parfaits for at least 15 minutes before serving to let the flavors meld.
