Ingredients

Sorbet Base
  • 1 cup coconut milk Full-fat for creaminess
  • 1/2 cup fresh lime juice About 4-5 limes
  • 1/4 cup granulated sugar Adjust based on sweetness preference
  • 1/4 cup water To dissolve sugar
  • 1 tablespoon lime zest For added flavor

Method

Making the Sorbet
  1. In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Remove from heat and let cool.
  2. In a mixing bowl, combine the coconut milk, fresh lime juice, lime zest, and the cooled sugar syrup. Whisk until well combined.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  4. Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up.
  5. Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly for easier scooping.

Notes

You can substitute the sugar with honey or agave syrup for a natural sweetener. For a more intense coconut flavor, add shredded coconut to the mixture before churning. This sorbet can be served in bowls or as a refreshing topping for fruit salads.
