Preparing the Chips
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Using a mandoline or a sharp knife, slice the beets as thinly as possible, about 1/16 inch thick.
  3. In a large bowl, toss the beet slices with olive oil, sea salt, black pepper, and garlic powder until evenly coated.
  4. Arrange the beet slices in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure they crisp up nicely.
  5. Bake in the preheated oven for 25-30 minutes, flipping the chips halfway through, until the edges are crisp and the chips are dry.
  6. Remove from the oven and let the chips cool for a few minutes on the baking sheet before transferring them to a serving bowl.
