Preheat the Oven
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with foil or parchment paper for easy cleanup.
Prepare the Chicken Thighs
- Pat the chicken thighs dry with paper towels to remove any excess moisture (this helps achieve a crispier skin).
- Rub the chicken thighs with olive oil, then season with garlic powder, onion powder, paprika, thyme, salt, and pepper on both sides.
Bake the Chicken
- Place the seasoned chicken thighs skin-side up on the prepared baking sheet.
- Bake for 35-40 minutes, or until the chicken skin is crispy and golden and the internal temperature reaches 165°F (75°C).
- If you want extra crispy skin, broil the chicken for the last 2-3 minutes.
Make the Honey Dijon Glaze
- While the chicken is baking, prepare the glaze.
- In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, minced garlic, and a pinch of salt and pepper.
- Taste and adjust the seasoning as needed.
- For extra spice, add crushed red pepper flakes.
Glaze the Chicken
- Once the chicken is done baking, brush the honey Dijon glaze generously over the chicken thighs.
- Return them to the oven for another 5 minutes, allowing the glaze to caramelize slightly.
Serve
- Transfer the glazed chicken thighs to a serving platter and garnish with fresh herbs, if desired.
- Serve immediately with your favorite sides.
