Ingredients
  

For the Chicken Thighs
  • 6 bone-in skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper to taste
For the Honey Dijon Glaze
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp olive oil
  • 1 clove garlic minced
  • Salt and pepper to taste
Optional Add-Ins
  • 1/2 tsp crushed red pepper flakes for a spicy kick
  • Fresh herbs like parsley or thyme for garnish

Method
 

Preheat the Oven
  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with foil or parchment paper for easy cleanup.
Prepare the Chicken Thighs
  1. Pat the chicken thighs dry with paper towels to remove any excess moisture (this helps achieve a crispier skin).
  2. Rub the chicken thighs with olive oil, then season with garlic powder, onion powder, paprika, thyme, salt, and pepper on both sides.
Bake the Chicken
  1. Place the seasoned chicken thighs skin-side up on the prepared baking sheet.
  2. Bake for 35-40 minutes, or until the chicken skin is crispy and golden and the internal temperature reaches 165°F (75°C).
  3. If you want extra crispy skin, broil the chicken for the last 2-3 minutes.
Make the Honey Dijon Glaze
  1. While the chicken is baking, prepare the glaze.
  2. In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, minced garlic, and a pinch of salt and pepper.
  3. Taste and adjust the seasoning as needed.
  4. For extra spice, add crushed red pepper flakes.
Glaze the Chicken
  1. Once the chicken is done baking, brush the honey Dijon glaze generously over the chicken thighs.
  2. Return them to the oven for another 5 minutes, allowing the glaze to caramelize slightly.
Serve
  1. Transfer the glazed chicken thighs to a serving platter and garnish with fresh herbs, if desired.
