Ingredients
  

For the Cauliflower Bites
  • 1 large cauliflower head cut into bite-sized florets
  • 1 cup whole wheat flour or gluten-free flour for a gluten-free option
  • 1 cup water or almond milk for added flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Buffalo Sauce
  • 1/2 cup hot sauce such as Frank's RedHot
  • 1/4 cup unsalted butter melted or vegan butter
  • 1 tablespoon apple cider vinegar optional for tanginess
For Serving
  • 1/2 cup blue cheese dressing or ranch dressing for dipping
  • 2 stalks celery cut into sticks

Method
 

Preparation
  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the whole wheat flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  3. Add the cauliflower florets to the batter, ensuring they are well coated.
Baking
  1. Spread the coated cauliflower florets evenly on the prepared baking sheet.
  2. Bake in the preheated oven for 20 minutes, or until golden and crispy.
Buffalo Sauce
  1. While the cauliflower is baking, prepare the buffalo sauce by whisking together the hot sauce, melted butter, and apple cider vinegar in a separate bowl.
  2. Once the cauliflower is done baking, remove it from the oven and toss it in the buffalo sauce until well coated.
  3. Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes to crisp up the sauce.
Serving
  1. Serve the crispy buffalo cauliflower bites hot with blue cheese dressing and celery sticks on the side.

Notes

For a vegan version, use a plant-based butter and a vegan dressing. Feel free to adjust the amount of hot sauce to suit your heat preference. These bites can also be made ahead of time and reheated in the oven for a quick snack!
