  • 1 can chickpeas drained and rinsed
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon smoked paprika optional
  • 1/2 teaspoon garlic powder optional
  • 1/2 teaspoon salt
For the Avocado Mixture
  • 1 large avocado ripe, mashed
  • 1 tablespoon lime juice freshly squeezed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 2 tablespoons cilantro chopped, for garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, and salt. Toss to coat the chickpeas evenly.
  3. Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
  4. Bake for 20-30 minutes, or until golden brown and crispy, shaking the pan halfway through to ensure even cooking.
Avocado Mixture
  1. While the chickpeas are baking, prepare the avocado mixture. In a bowl, mash the ripe avocado with the lime juice, salt, and black pepper until creamy and smooth.
  2. Once baked, remove the chickpeas from the oven and let them cool for a few minutes.
Assembly
  1. To serve, spoon a dollop of the avocado mixture onto each crispy chickpea, and sprinkle chopped cilantro on top as a garnish.
