Preparation and Cooking
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the drained and rinsed chickpeas, olive oil, paprika, cumin, garlic powder, and salt. Toss well to coat the chickpeas evenly.
- Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, shaking the pan halfway through, until golden brown and crispy.
- Remove the chickpeas from the oven and let them cool slightly.
- Once cooled, sprinkle the shredded cheese over the chickpeas and return to the oven for an additional 5 minutes, or until the cheese is melted.
- Remove from the oven and allow to cool for a couple of minutes before serving. Top with salsa, sour cream, sliced green onions, and jalapeños if desired.
Notes
For an extra kick, try adding more spices like cayenne pepper or chili powder to the chickpeas. You can also experiment with different toppings such as avocado or diced tomatoes. These nacho bites are best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
