  • 1 cup all-purpose flour or gluten-free flour for a gluten-free option
  • 1 cup coconut milk full-fat for creamier texture
  • 1 cup panko breadcrumbs for extra crunch
  • 2 tablespoons curry powder adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
  • 2 tablespoons coconut oil melted, for drizzling
For the Dipping Sauce
  • 1 cup coconut yogurt or any dairy-free yogurt
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon maple syrup optional, for sweetness
  • 1 teaspoon curry powder

Method
 

Preparation of Cauliflower Bites
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, curry powder, garlic powder, salt, and black pepper.
  3. Add the coconut milk to the dry ingredients and mix until you have a smooth batter.
  4. Dip each cauliflower floret into the batter, ensuring it's fully coated, then roll it in the panko breadcrumbs until well-covered.
  5. Place the coated cauliflower bites on the prepared baking sheet. Drizzle the melted coconut oil over the top of the bites.
  6. Bake in the preheated oven for 25-30 minutes, or until the bites are golden brown and crispy, flipping halfway through for even cooking.
Preparation of Dipping Sauce
  1. In a small bowl, combine the coconut yogurt, lime juice, maple syrup (if using), and curry powder. Mix well until smooth.
  2. Taste and adjust seasoning if necessary. Chill in the refrigerator until ready to serve.
Serving
  1. Once the cauliflower bites are done baking, remove them from the oven and let them cool slightly.
  2. Serve warm with the curry coconut dipping sauce on the side.

Notes
