Ingredients
  

For the Chicken
  • 4 pieces bone-in, skin-on chicken thighs preferably organic
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup breadcrumbs preferably panko for extra crispiness
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1 tablespoon fresh rosemary finely chopped
  • 1 large egg beaten
  • 1/2 cup all-purpose flour for dredging
For Cooking
  • 2 tablespoons olive oil for frying

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, mix the breadcrumbs, parsley, thyme, rosemary, salt, and pepper together until well combined.
  3. Set up a dredging station: Place the flour in one shallow dish, the beaten egg in another, and the breadcrumb mixture in a third.
Coating the Chicken
  1. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
  2. Dredge each thigh in the flour, shaking off the excess, then dip in the beaten egg, and finally coat with the breadcrumb mixture, pressing gently to adhere.
Cooking
  1. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin side down and cook for about 5-7 minutes until the skin is golden brown and crispy.
  2. Flip the chicken thighs over and transfer the skillet to the preheated oven. Bake for an additional 20-25 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

Notes
