Prepare the Cod
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together the breadcrumbs, parmesan cheese, parsley, dill, garlic powder, salt, and black pepper until well combined.
- Place the cod fillets on the prepared baking sheet. Drizzle with olive oil and press the breadcrumb mixture evenly onto the top of each fillet.
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
Serve
- Remove the cod from the oven and let it rest for a couple of minutes.
- Serve with lemon wedges and a side of mixed greens for a light and refreshing meal.
Notes
For added flavor, you can marinate the cod fillets in lemon juice and olive oil for 15-30 minutes before coating with the herb mixture. Feel free to substitute other herbs like basil or thyme based on your preference!
