Ingredients
  

For the Cod
  • 4 fillets cod fillets 6-8 oz each
  • 1/2 cup breadcrumbs preferably panko for extra crunch
  • 1/4 cup parmesan cheese finely grated
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil for drizzling
For Serving
  • 1 lemon lemon wedges for garnish
  • 2 cups mixed greens for a fresh side salad

Method
 

Prepare the Cod
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the breadcrumbs, parmesan cheese, parsley, dill, garlic powder, salt, and black pepper until well combined.
  3. Place the cod fillets on the prepared baking sheet. Drizzle with olive oil and press the breadcrumb mixture evenly onto the top of each fillet.
  4. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
Serve
  1. Remove the cod from the oven and let it rest for a couple of minutes.
  2. Serve with lemon wedges and a side of mixed greens for a light and refreshing meal.

Notes

For added flavor, you can marinate the cod fillets in lemon juice and olive oil for 15-30 minutes before coating with the herb mixture. Feel free to substitute other herbs like basil or thyme based on your preference!
