Ingredients
  

Fritter Mixture
  • 1 cup cooked quinoa Use any variety, preferably cooled
  • 2 cups fresh spinach Chopped, packed
  • 1/2 cup feta cheese Crumbled
  • 1/4 cup all-purpose flour Can substitute with whole wheat flour
  • 2 large eggs Beaten
  • 2 cloves garlic Minced
  • 1/2 teaspoon cumin Ground
  • 1/2 teaspoon salt Adjust to taste
  • 1/4 teaspoon black pepper Freshly ground
For Cooking
  • 2 tablespoons olive oil For frying

Preparation
  1. In a large mixing bowl, combine the cooked quinoa, chopped spinach, feta cheese, flour, beaten eggs, minced garlic, cumin, salt, and black pepper. Mix until well combined.
  2. Heat olive oil in a large skillet over medium heat. Once hot, reduce to medium-low.
  3. Using a spoon or your hands, form the mixture into small patties (about 2-3 inches in diameter) and place them in the hot skillet. Do not overcrowd the pan; work in batches if necessary.
  4. Cook each fritter for about 4-5 minutes on each side, or until golden brown and crispy. Adjust heat as needed to ensure they cook evenly without burning.
  5. Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
Serving
  1. Serve warm with your choice of dipping sauce, such as tzatziki or yogurt sauce.

Notes

Feel free to add other ingredients like chopped herbs (parsley or dill) for extra flavor. These fritters can also be baked for a healthier option; bake at 400°F (200°C) for about 20 minutes, flipping halfway through.
