Ingredients
  

For the Crispy Chickpeas
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt and freshly ground black pepper to taste
Optional Seasonings
  • 1/4 tsp cayenne pepper for heat
  • 1/2 tsp curry powder for a spiced twist
  • 1 tbsp nutritional yeast for a cheesy flavor
Substitutions
  • Oil-Free: You can roast the chickpeas without oil though they may not be as crispy. Toss with seasoning after roasting for best results.
  • Vegan and Gluten-Free: This recipe is naturally vegan and gluten-free!

Method
 

Preheat the Oven
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the Chickpeas
  1. Drain and rinse the chickpeas thoroughly.
  2. Pat them dry with a clean kitchen towel or paper towels—removing excess moisture is key to achieving crispiness.
  3. If any of the skins peel off, feel free to remove them, but it’s not necessary.
Season the Chickpeas
  1. Transfer the dried chickpeas to a bowl and toss them with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
  2. Make sure the chickpeas are evenly coated with oil and seasoning.
Roast the Chickpeas
  1. Spread the seasoned chickpeas in an even layer on the prepared baking sheet.
  2. Roast in the preheated oven for 35-40 minutes, shaking the pan halfway through to ensure even cooking.
  3. The chickpeas should be golden and crispy.
Cool and Serve
  1. Once roasted, remove the chickpeas from the oven and let them cool for 5-10 minutes to crisp up further.
  2. Serve immediately or store in an airtight container for later snacking.
