Preparing the Fritters
- Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, gluten-free flour, beaten egg, shredded cheddar cheese (if using), chopped parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Heat olive oil in a large skillet over medium heat. Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook the fritters for about 4-5 minutes on each side or until golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to absorb excess oil.
Making the Dipping Sauce (optional)
- In a small bowl, mix together the Greek yogurt, lemon juice, and dried dill until smooth. Adjust seasoning to taste.
Notes
For extra flavor, you can add grated parmesan or different herbs such as basil or chives to the fritters. Serve them warm with the dipping sauce for an irresistible appetizer!
