Ingredients
  

For the Wrap
  • 4 large eggs beaten
  • 1 large ripe avocado mashed
  • 4 whole whole wheat tortillas or any tortilla of choice
  • 1 cup spinach fresh, chopped
  • 1/2 cup shredded cheese cheddar or your favorite
  • 1 tablespoon olive oil for cooking
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

  • 1/4 cup salsa for serving
  • 2 tablespoons Greek yogurt for serving

Method
 

Cooking the Eggs and Assembling the Wrap
  1. In a large skillet, heat the olive oil over medium heat. Add the beaten eggs, season with salt and pepper, and scramble until fully cooked, about 5-7 minutes. Remove from heat.
  2. In a separate bowl, mash the avocado until smooth. You can add a pinch of salt and lemon juice for extra flavor if desired.
  3. Warm the whole wheat tortillas in a dry skillet or microwave for about 15-20 seconds until soft and pliable.
  4. To assemble each wrap, spread a layer of mashed avocado on the tortilla. Next, add a portion of the scrambled eggs, followed by a handful of chopped spinach and a sprinkle of shredded cheese.
  5. Roll the tortilla tightly from one end to the other to form the wrap, tucking in the sides as you go to secure the filling.
  6. If desired, return the wraps to the skillet and cook for another 2-3 minutes on each side until golden brown and the cheese is melted.

Notes

Feel free to customize your wrap with additional ingredients like diced tomatoes, bell peppers, or even cooked bacon for extra flavor. This recipe is versatile and can be adjusted to suit your taste!
