Ingredients
  

  • 3 cups cooked and cooled jasmine rice preferably one-day-old
  • 3 large eggs beaten
  • 3 tablespoons vegetable oil
  • 1 small onion finely chopped
  • 1/2 cup frozen peas and carrots thawed
  • 2 cloves garlic minced
  • 3 green onions thinly sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional: cooked protein of your choice chicken, shrimp, or tofu

Method
 

  1. Prep your ingredients: Before you start cooking, ensure that your rice is cooled and your vegetables are chopped. This will make the process smoother and more enjoyable.
  2. Heat the pan: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Once the oil is hot, add the beaten eggs and cook until they are scrambled and just set. Transfer the eggs to a plate and set aside.
  3. Sauté the onions: In the same pan, add another tablespoon of vegetable oil and sauté the onions until they become translucent and slightly golden. This should take about 3-5 minutes.
  4. Add the garlic and veggies: Add the minced garlic and the peas and carrots to the pan. Stir-fry for another 2-3 minutes, or until the vegetables are tender.
  5. Mix in the rice: Add the cooled rice to the skillet, breaking up any clumps with a spatula or the back of a spoon. Stir-fry the rice for 3-4 minutes, ensuring that it is evenly coated with the oil and vegetables.
  6. Season your rice: Drizzle the soy sauce and sesame oil over the rice, stirring to combine. Taste and adjust the seasoning with salt and pepper as needed.
  7. Incorporate the eggs: Gently fold in the scrambled eggs, along with the green onions, and mix until everything is evenly distributed. If you're adding cooked protein, now is the time to mix it in.
  8. Serve and enjoy: Dish up your delicious Egg Fried Rice, garnish with additional green onions if desired, and enjoy it with your favorite main dish or on its own as a satisfying meal.
