Method
Marinate the Chicken
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper.
- Add the chicken and coat it well in the marinade.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Tzatziki Sauce
- In a medium bowl, combine the Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, and fresh dill.
- Season with salt and pepper to taste.
- Stir until well combined and set aside in the fridge until ready to use.
Grill the Chicken
- Heat a grill pan or skillet over medium-high heat.
- Remove the chicken from the marinade and cook for 5-6 minutes per side, or until the chicken is fully cooked through and has a nice char.
- Remove from heat and let rest for a few minutes before slicing into strips.
Assemble the Wraps
- Warm the pita breads or flatbreads on the grill or in a pan for 1-2 minutes.
- Spread a generous layer of tzatziki sauce on each pita.
- Add a few slices of grilled chicken, then top with cherry tomatoes, red onion, cucumber slices, and crumbled feta cheese.
- Garnish with fresh parsley or dill if desired.
Serve
- Fold or wrap the pita around the filling and serve immediately.
