Ingredients
  

For the Zucchini Wraps
  • 2 large zucchini thinly sliced lengthwise (about 1/4 inch thick)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste
For the Caprese Filling
  • 8 oz fresh mozzarella cheese sliced into rounds
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh basil leaves
  • 1-2 tbsp balsamic glaze or balsamic reduction
  • Freshly cracked black pepper for garnish
Optional Add-Ins
  • A sprinkle of red pepper flakes for heat
  • Thinly sliced avocado for creaminess
  • A drizzle of pesto for extra flavor
Substitutions
  • Dairy-Free: Use dairy-free mozzarella or a plant-based cheese alternative.
  • Vegan: Use vegan cheese and add grilled tofu or tempeh for extra protein.

Method
 

Prepare the Zucchini
  1. Preheat your grill or grill pan over medium-high heat.
  2. Brush both sides of the zucchini slices with olive oil and season with garlic powder, salt, and pepper.
Grill the Zucchini
  1. Place the zucchini slices on the grill and cook for 2-3 minutes per side, or until tender and slightly charred.
  2. Remove the zucchini from the grill and set aside to cool slightly.
Assemble the Wraps
  1. Lay the grilled zucchini slices flat on a clean surface.
  2. Place a slice of mozzarella cheese, a couple of halved cherry tomatoes, and a few basil leaves on one end of each zucchini slice.
  3. Roll up the zucchini slices, securing the filling inside.
  4. Repeat with the remaining zucchini and fillings.
Drizzle with Balsamic Glaze
  1. Arrange the zucchini wraps on a serving plate and drizzle with balsamic glaze.
  2. Garnish with freshly cracked black pepper and any optional toppings like red pepper flakes or pesto.
Serve
