Method
Prepare the Zucchini
- Preheat your grill or grill pan over medium-high heat.
- Brush both sides of the zucchini slices with olive oil and season with garlic powder, salt, and pepper.
Grill the Zucchini
- Place the zucchini slices on the grill and cook for 2-3 minutes per side, or until tender and slightly charred.
- Remove the zucchini from the grill and set aside to cool slightly.
Assemble the Wraps
- Lay the grilled zucchini slices flat on a clean surface.
- Place a slice of mozzarella cheese, a couple of halved cherry tomatoes, and a few basil leaves on one end of each zucchini slice.
- Roll up the zucchini slices, securing the filling inside.
- Repeat with the remaining zucchini and fillings.
Drizzle with Balsamic Glaze
- Arrange the zucchini wraps on a serving plate and drizzle with balsamic glaze.
- Garnish with freshly cracked black pepper and any optional toppings like red pepper flakes or pesto.
Serve
