  • 4 pieces chicken breasts boneless and skinless
  • 1 cup pesto sauce store-bought or homemade
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach washed and roughly chopped
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
For Serving
  • 1/4 cup parmesan cheese grated, optional for garnish

Method
 

Preparation and Cooking
  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, arrange the chicken breasts in a single layer.
  3. Spread the pesto sauce evenly over the chicken breasts, ensuring they are well coated.
  4. Add the halved cherry tomatoes and chopped spinach around the chicken in the baking dish.
  5. Drizzle olive oil over the vegetables and sprinkle with salt and black pepper.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. After 25 minutes, remove the foil and bake for an additional 5-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Once cooked, remove from the oven and let it rest for 5 minutes before serving.
  9. If desired, sprinkle grated parmesan cheese over the top before serving.

Notes

Feel free to customize the vegetables based on your preferences. Zucchini, bell peppers, or asparagus can also work wonderfully in this dish. You can also use homemade pesto for an extra special touch.
