Prepare the Chicken
- Season the chicken breasts with salt and black pepper.
- Dredge them lightly in flour, shaking off any excess.
Cook the Chicken
- In a large skillet, heat the butter and olive oil over medium-high heat.
- Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
Make the Honey Garlic Sauce
- In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
- Be careful not to burn the garlic.
- Stir in the honey, soy sauce, and apple cider vinegar.
- Bring the mixture to a simmer and cook for 3-4 minutes until slightly reduced.
- If you prefer a thicker sauce, stir in the cornstarch slurry and cook for an additional 1-2 minutes until the sauce thickens.
- Return the chicken breasts to the skillet, spooning the sauce over them to coat.
- Let them simmer in the sauce for another 2-3 minutes.
Make the Mashed Potatoes
- While the chicken is cooking, place the chopped potatoes in a large pot and cover with cold water.
- Add a pinch of salt and bring to a boil over medium-high heat.
- Cook for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot.
- Add the milk or cream, butter, salt, and pepper.
- Mash the potatoes until smooth and creamy.
- Adjust the seasoning to taste.
Serve
- Serve the Honey Garlic Chicken hot, over a bed of creamy mashed potatoes.
- Spoon any extra sauce over the chicken and garnish with chopped parsley.
