Prepare the Panna Cotta
- In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for about 5 minutes to bloom.
- In a saucepan over medium heat, combine the heavy cream, whole milk, honey, dried lavender, and salt. Stir until the honey is fully dissolved and the mixture is heated but not boiling.
- Remove the saucepan from heat and add the bloomed gelatin, stirring until completely dissolved.
- Add the vanilla extract and mix well.
- Strain the mixture through a fine sieve into a measuring jug to remove the lavender buds.
- Pour the strained mixture evenly into four serving glasses or molds.
- Cover and refrigerate for at least 4 hours or until set.
Serve
- Once set, remove the panna cotta from the refrigerator.
- Drizzle with honey and garnish with fresh lavender flowers if desired.
- Serve chilled and enjoy your floral dessert!
Notes
For a more intense lavender flavor, steep the dried lavender in the cream mixture for an additional 10 minutes before adding the gelatin. You can also experiment with different sweeteners or add citrus zest for a unique twist.
