Method
Preparation and Marinating
- In a medium bowl, whisk together the olive oil, fresh lemon juice, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper until well combined.
- Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Grilling
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
- Place the chicken thighs skin-side down on the grill and cook for about 7-8 minutes, or until the skin is crispy and golden brown.
- Flip the chicken thighs and continue grilling for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
Notes
