Ingredients
  

For the Marinade
  • 1 cup olive oil extra virgin recommended
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 4 cloves garlic minced
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
For the Chicken
  • 4 pieces bone-in chicken thighs skin-on recommended for extra flavor

Method
 

Preparation and Marinating
  1. In a medium bowl, whisk together the olive oil, fresh lemon juice, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper until well combined.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Grilling
  1. Preheat your grill to medium-high heat (about 375°F to 400°F).
  2. Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
  3. Place the chicken thighs skin-side down on the grill and cook for about 7-8 minutes, or until the skin is crispy and golden brown.
  4. Flip the chicken thighs and continue grilling for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.

Notes

For added flavor, you can marinate the chicken overnight. Serve with a side of grilled vegetables or a fresh salad. Enjoy!
