Method
Prepare the Lava Cakes
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour, shaking off the excess.
- In a medium saucepan, melt the butter and chopped white chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
- In a large bowl, whisk together the flour, powdered sugar, matcha powder, eggs, egg yolks, and vanilla extract until well combined.
- Slowly pour the melted chocolate mixture into the egg mixture, stirring gently until just combined.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Bake and Serve
- Bake the lava cakes in the preheated oven for 12-14 minutes, or until the edges are firm but the centers still jiggle slightly.
- Remove from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and tap gently to release.
- Serve warm with a drizzle of heavy cream and a dusting of matcha powder on top.
Notes
For an extra flavor twist, consider adding a pinch of sea salt on top just before serving. You can also substitute the white chocolate with dark chocolate for a richer taste. Make sure to serve the lava cakes immediately after baking for the best molten center experience!
