  • 1/2 cup unsalted butter plus extra for greasing
  • 4 oz white chocolate chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons matcha green tea powder high quality recommended
  • 1/2 teaspoon vanilla extract
For Serving
  • 1/4 cup heavy cream optional for drizzling
  • 1 tablespoon matcha powder for dusting

Method
 

Prepare the Lava Cakes
  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour, shaking off the excess.
  2. In a medium saucepan, melt the butter and chopped white chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together the flour, powdered sugar, matcha powder, eggs, egg yolks, and vanilla extract until well combined.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring gently until just combined.
  5. Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Bake and Serve
  1. Bake the lava cakes in the preheated oven for 12-14 minutes, or until the edges are firm but the centers still jiggle slightly.
  2. Remove from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and tap gently to release.
  3. Serve warm with a drizzle of heavy cream and a dusting of matcha powder on top.

Notes

For an extra flavor twist, consider adding a pinch of sea salt on top just before serving. You can also substitute the white chocolate with dark chocolate for a richer taste. Make sure to serve the lava cakes immediately after baking for the best molten center experience!
