- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, garlic powder, oregano, smoked paprika, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade. Let them sit for 10 minutes while you prepare the vegetables.
- In a large baking dish, spread out the cherry tomatoes, olives, red onion, and zucchini evenly.
- Place the marinated chicken thighs on top of the vegetables, skin side up.
- Drizzle the lemon juice over the chicken and veggies.
- Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the skin is crispy.
- Once cooked, remove the dish from the oven and let it rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
