For the Chicken
  • 4 pieces bone-in, skin-on chicken thighs about 1.5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup kalamata olives pitted and halved
  • 1 medium red onion sliced
  • 1 cup zucchini sliced
  • 1 lemon juiced
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Baking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, garlic powder, oregano, smoked paprika, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Let them sit for 10 minutes while you prepare the vegetables.
  4. In a large baking dish, spread out the cherry tomatoes, olives, red onion, and zucchini evenly.
  5. Place the marinated chicken thighs on top of the vegetables, skin side up.
  6. Drizzle the lemon juice over the chicken and veggies.
  7. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the skin is crispy.
  8. Once cooked, remove the dish from the oven and let it rest for 5 minutes.
  9. Garnish with chopped fresh parsley before serving.

Notes

Feel free to customize the vegetables based on seasonal availability. You can also substitute chicken thighs with chicken breasts, but adjust the cooking time accordingly as they may cook faster. Serve with a side of crusty bread or over rice for a complete meal.
