Method
Prepare the Tzatziki Drizzle (Optional)
- In a small bowl, mix together the Greek yogurt, lemon juice, chopped dill or mint, salt, and pepper.
- Set aside for drizzling.
Assemble the Wraps
- Lay the wraps flat on a clean surface.
- Spread about 1/4 cup of hummus onto each wrap, leaving a border around the edges for easy rolling.
Add the Fillings
- Layer the spinach or mixed greens over the hummus.
- Then, evenly distribute the sliced chicken, cucumber, cherry tomatoes, red onion, feta cheese, and kalamata olives over the greens.
Drizzle with Tzatziki (Optional)
- If using, drizzle a spoonful of tzatziki over the fillings, or spread a thin layer on top for extra creaminess.
Roll and Serve
- Fold in the sides of the wrap, then roll tightly from the bottom up.
- Slice the wrap in half if desired, and serve with a side of extra tzatziki, hummus, or your favorite dipping sauce.
