Ingredients
  

Mediterranean Chicken Wrap
  • 2 large whole-wheat or spinach wraps
  • 1 cup cooked chicken breast sliced or shredded
  • 1/2 cup hummus any flavor you prefer
  • 1/2 cup cucumber thinly sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup kalamata olives sliced (optional)
  • Fresh spinach or mixed greens
Tzatziki Drizzle (optional)
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint chopped
  • Salt and pepper to taste
Optional Add-Ins
  • 1/4 avocado sliced, for extra creaminess
  • A handful of fresh basil or parsley leaves for added flavor
Substitutions
  • Vegan: Substitute chicken with falafel tofu, or roasted chickpeas, and use a plant-based yogurt in the tzatziki.
  • Gluten-Free: Use gluten-free wraps or collard greens for wrapping.

Method
 

Prepare the Tzatziki Drizzle (Optional)
  1. In a small bowl, mix together the Greek yogurt, lemon juice, chopped dill or mint, salt, and pepper.
  2. Set aside for drizzling.
Assemble the Wraps
  1. Lay the wraps flat on a clean surface.
  2. Spread about 1/4 cup of hummus onto each wrap, leaving a border around the edges for easy rolling.
Add the Fillings
  1. Layer the spinach or mixed greens over the hummus.
  2. Then, evenly distribute the sliced chicken, cucumber, cherry tomatoes, red onion, feta cheese, and kalamata olives over the greens.
Drizzle with Tzatziki (Optional)
  1. If using, drizzle a spoonful of tzatziki over the fillings, or spread a thin layer on top for extra creaminess.
Roll and Serve
  1. Fold in the sides of the wrap, then roll tightly from the bottom up.
  2. Slice the wrap in half if desired, and serve with a side of extra tzatziki, hummus, or your favorite dipping sauce.
