Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced

Method
 

Preparation
  1. In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, crumbled feta cheese, and chopped parsley.
  2. In a separate small bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
