Prepare the Chickpea Filling
- In a large mixing bowl, combine the rinsed and drained chickpeas, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.
- Pour the dressing over the chickpea mixture and gently toss to combine. Set aside to let the flavors meld.
Assemble the Wraps
- Lay out the whole wheat tortillas on a clean surface.
- Spread a tablespoon of hummus on each tortilla.
- Add a generous amount of the chickpea filling and a handful of mixed greens on top of the hummus.
- Fold the sides of the tortilla inwards and then roll it up tightly from the bottom to form a wrap.
- Cut each wrap in half diagonally and serve immediately or wrap in foil for an on-the-go lunch.
Notes
Feel free to customize the filling by adding other vegetables such as bell peppers or shredded carrots. You can also use different types of cheese or add avocado for extra creaminess.
