In a blender, combine the rolled oats, banana, Greek yogurt, eggs, protein powder, baking powder, and salt. Blend until smooth.
Preheat a non-stick pan or griddle over medium heat and lightly coat with cooking spray or oil.
Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
Serve the pancakes with your choice of toppings, such as fresh fruit, nuts, seeds, or a drizzle of honey or maple syrup.
