Ingredients
  

For the Puff Pastry Bites
  • 1 sheet puff pastry, thawed store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons fresh parsley, chopped or 1 tablespoon dried parsley
  • 1 tablespoon fresh chives, chopped or 1 teaspoon dried chives
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg egg, beaten for egg wash

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry sheet to smooth out creases. Cut the pastry into 2-inch squares.
  3. In a mixing bowl, combine the mozzarella cheese, cheddar cheese, cream cheese, parsley, chives, garlic powder, salt, and black pepper. Mix until well combined.
  4. Place a tablespoon of the cheese mixture in the center of each pastry square.
  5. Fold the corners of the pastry squares over the filling to create a package shape and pinch to seal. Place seam-side down on the prepared baking sheet.
  6. Brush the tops of the pastry bites with the beaten egg to ensure a golden color when baked.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

For a twist, you can add other ingredients like cooked bacon bits or spinach to the cheese mixture. These bites can also be made ahead of time and frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
