Ingredients
  

For the Bites
  • 1 cup quinoa rinsed and drained
  • 2 cups fresh spinach chopped
  • 1/2 cup grated Parmesan cheese or nutritional yeast for a vegan option
  • 1/4 cup bread crumbs can use gluten-free if desired
  • 2 large eggs lightly beaten
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning or herbs of choice

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, combine the cooked quinoa, chopped spinach, grated Parmesan cheese, bread crumbs, beaten eggs, minced garlic, salt, black pepper, and Italian seasoning. Mix well until all ingredients are fully incorporated.
  4. Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter, and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy on the outside.
  6. Remove from the oven and let them cool slightly before serving.

Notes

For added flavor, consider mixing in some chopped sun-dried tomatoes or olives. These bites can be served warm or at room temperature. They also freeze well; simply reheat in the oven when ready to enjoy.
