  • 1 can black beans drained and rinsed
  • 1 teaspoon olive oil for sautéing
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder or to taste
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
For Serving
  • 8 small corn tortillas or flour tortillas
  • 1 cup fresh cilantro chopped, for garnish
  • 1 medium avocado sliced, for topping
  • 1/2 cup sour cream or Greek yogurt, for serving
  • 1 lime juiced for added flavor

Method
 

Prepare the Filling
  1. In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are tender and starting to brown.
  2. Add the black beans, cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for another 5-7 minutes until heated through and flavors meld.
Assemble the Tacos
  1. Warm the tortillas in a dry skillet or microwave until pliable.
  2. Spoon the sweet potato and black bean mixture onto each tortilla.
  3. Top with chopped cilantro, sliced avocado, a dollop of sour cream, and a squeeze of lime juice.
