For the Skillet
  • 2 medium sweet potatoes peeled and diced
  • 1 cup bell pepper diced, any color
  • 1 cup red onion diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil for sautéing
  • 4 large eggs to top the skillet
  • salt to taste salt
  • pepper to taste black pepper
  • 1 avocado avocado sliced, for garnish
  • 2 tablespoons fresh cilantro chopped, for garnish

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add the olive oil. Once hot, add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  2. Add the diced bell pepper and red onion to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
  3. Stir in the minced garlic, smoked paprika, and ground cumin. Cook for another 2 minutes until fragrant.
  4. Create four small wells in the sweet potato mixture and crack an egg into each well. Season with salt and pepper.
  5. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  6. Remove from heat and garnish with sliced avocado and chopped cilantro before serving.

Notes

This dish can easily be customized with your favorite vegetables or by adding cooked sausage or bacon for extra protein. Feel free to adjust the spices according to your taste preferences.
