- In a large skillet over medium heat, add the olive oil. Once hot, add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add the diced bell pepper and red onion to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
- Stir in the minced garlic, smoked paprika, and ground cumin. Cook for another 2 minutes until fragrant.
- Create four small wells in the sweet potato mixture and crack an egg into each well. Season with salt and pepper.
- Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Remove from heat and garnish with sliced avocado and chopped cilantro before serving.
Notes
