Ingredients
  

For the Cauliflower Steaks
  • 1 large head of cauliflower cut into 1-inch thick steaks
  • 3 tablespoons olive oil for brushing
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
For Serving
  • 1 cup fresh parsley chopped, for garnish
  • 1 lemon cut into wedges, for serving

Method
 

Prepare the Cauliflower
  1. Preheat your grill or grill pan to medium-high heat.
  2. Remove the leaves from the cauliflower and trim the stem to create a stable base.
  3. Slice the cauliflower into 1-inch thick steaks. You should be able to get about 2-3 steaks from a large head of cauliflower.
Season and Cook
  1. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Brush both sides of the cauliflower steaks with the oil and spice mixture.
  3. Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
Serve
  1. Once cooked, remove the cauliflower steaks from the grill and let them rest for a couple of minutes.
  2. Serve warm, garnished with chopped parsley and lemon wedges on the side.

Notes

For extra flavor, consider marinating the cauliflower steaks in the seasoning mixture for 30 minutes before grilling. You can also add a drizzle of tahini or a vegan yogurt sauce on top for added creaminess.
