Method
 

Cookie Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin puree, beaten egg, and vanilla extract to the butter mixture. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid over-mixing.
  6. Fold in the chocolate chips until evenly distributed.
  7. Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up while cooling.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
