Prepare the Spicy Roasted Chickpeas
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, cumin, cayenne pepper, and salt. Toss until the chickpeas are evenly coated.
- Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the chickpeas are golden and crispy.
Assemble the Nachos
- While the chickpeas are roasting, prepare a large baking dish or oven-safe platter with a layer of tortilla chips.
- Once the chickpeas are done, remove them from the oven and evenly distribute them over the tortilla chips.
- Sprinkle the shredded cheese over the top of the nachos.
- Return the nachos to the oven for about 5-7 minutes, or until the cheese is melted and bubbly.
Serve
- Remove the nachos from the oven and top with sour cream, sliced jalapeños, and chopped cilantro.
- Serve immediately and enjoy your spicy roasted chickpea nachos!
