Ingredients
  

For the Spicy Roasted Chickpeas
  • 1 can chickpeas 15 oz, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1/2 teaspoon salt
For the Nachos
  • 8 ounces tortilla chips
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream for serving
  • 1/2 cup sliced jalapeños optional
  • 1/4 cup chopped cilantro for garnish

Method
 

Prepare the Spicy Roasted Chickpeas
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, cumin, cayenne pepper, and salt. Toss until the chickpeas are evenly coated.
  3. Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the chickpeas are golden and crispy.
Assemble the Nachos
  1. While the chickpeas are roasting, prepare a large baking dish or oven-safe platter with a layer of tortilla chips.
  2. Once the chickpeas are done, remove them from the oven and evenly distribute them over the tortilla chips.
  3. Sprinkle the shredded cheese over the top of the nachos.
  4. Return the nachos to the oven for about 5-7 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove the nachos from the oven and top with sour cream, sliced jalapeños, and chopped cilantro.
  2. Serve immediately and enjoy your spicy roasted chickpea nachos!

Notes

Feel free to customize your nachos with additional toppings such as diced tomatoes, avocado, or black olives. You can also adjust the spices based on your heat preference.
