  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1/2 cup cooked sausage crumbled (optional)
  • 1/4 cup green onions chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
For the Peppers
  • 12 mini sweet peppers mini sweet peppers halved and seeds removed
For Topping
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled sausage (if using), chopped green onions, garlic powder, salt, and black pepper. Mix until well combined.
  3. Take each mini sweet pepper half and fill it generously with the cheese mixture.
  4. Place the stuffed mini peppers on a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  2. Once done, remove from the oven and let them cool for a few minutes.
Serving
  1. Garnish with chopped fresh parsley before serving. Enjoy your colorful and flavor-packed stuffed mini peppers!
