Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the peeled and cut carrots with olive oil, salt, and black pepper. Toss to coat evenly.
Roasting
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring halfway through.
Glazing
- While the carrots are roasting, prepare the glaze by whisking together the maple syrup and chipotle chili powder in a small bowl.
- Once the carrots are done roasting, remove them from the oven and drizzle the maple chipotle glaze over the carrots. Toss to coat thoroughly.
- Return the glazed carrots to the oven and roast for an additional 5-7 minutes, allowing the glaze to set.
Serving
- Remove the carrots from the oven and let them cool for a few minutes before serving. Enjoy as a delicious side dish!
