  • 1 pound carrots peeled and cut into 1-inch pieces
For the Glaze
  • 1/4 cup pure maple syrup preferably grade A
  • 1 tablespoon chipotle chili powder adjust to taste
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the peeled and cut carrots with olive oil, salt, and black pepper. Toss to coat evenly.
Roasting
  1. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  2. Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring halfway through.
Glazing
  1. While the carrots are roasting, prepare the glaze by whisking together the maple syrup and chipotle chili powder in a small bowl.
  2. Once the carrots are done roasting, remove them from the oven and drizzle the maple chipotle glaze over the carrots. Toss to coat thoroughly.
  3. Return the glazed carrots to the oven and roast for an additional 5-7 minutes, allowing the glaze to set.
