Ingredients
  

For the Quinoa
  • 1 cup quinoa rinsed
  • 2 cups water
For the Salad
  • 1 medium avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 medium lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cooking the Quinoa
  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  3. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the quinoa with a fork and then let it cool.
Preparing the Salad
  1. In a large mixing bowl, combine the diced avocado, halved cherry tomatoes, diced cucumber, chopped red onion, and fresh cilantro.
  2. Add the cooled quinoa to the bowl and gently mix the ingredients together.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serving
