Method
Cooking the Quinoa
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the quinoa with a fork and then let it cool.
Preparing the Salad
- In a large mixing bowl, combine the diced avocado, halved cherry tomatoes, diced cucumber, chopped red onion, and fresh cilantro.
- Add the cooled quinoa to the bowl and gently mix the ingredients together.
- In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
