Ingredients
  

For the Marinade
  • 1/4 cup olive oil extra virgin for best flavor
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 tablespoon lemon zest freshly grated
  • 1 tablespoon honey optional for sweetness
  • 2 cloves garlic minced
  • 1/4 cup fresh basil leaves chopped
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
For the Shrimp
  • 1.5 pounds large shrimp peeled and deveined
For Serving
  • 1 lemon cut into wedges for garnish
  • 1/4 cup fresh basil leaves for garnish

Method
 

Marinate the Shrimp
  1. In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, honey, minced garlic, chopped basil, salt, and black pepper until well combined.
  2. Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes, up to 30 minutes for more flavor.
Prepare the Skewers
  1. While the shrimp is marinating, soak wooden skewers in water for at least 15 minutes to prevent burning on the grill.
  2. Preheat your grill to medium-high heat.
Grill the Shrimp
  1. Thread the marinated shrimp onto the soaked skewers, about 4-5 shrimp per skewer.
  2. Place the skewers on the preheated grill and cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
Serve
  1. Remove the skewers from the grill and let them rest for a minute. Serve warm, garnished with lemon wedges and fresh basil leaves.

Notes

For a spicier kick, add a pinch of red pepper flakes to the marinade. You can also substitute shrimp with chicken or vegetables for a different variation. Serve with a fresh salad or over rice for a complete meal.
