Method
Marinate the Shrimp
- In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, honey, minced garlic, chopped basil, salt, and black pepper until well combined.
- Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes, up to 30 minutes for more flavor.
Prepare the Skewers
- While the shrimp is marinating, soak wooden skewers in water for at least 15 minutes to prevent burning on the grill.
- Preheat your grill to medium-high heat.
Grill the Shrimp
- Thread the marinated shrimp onto the soaked skewers, about 4-5 shrimp per skewer.
- Place the skewers on the preheated grill and cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
Serve
- Remove the skewers from the grill and let them rest for a minute. Serve warm, garnished with lemon wedges and fresh basil leaves.
Notes
For a spicier kick, add a pinch of red pepper flakes to the marinade. You can also substitute shrimp with chicken or vegetables for a different variation. Serve with a fresh salad or over rice for a complete meal.
