Ingredients
  

For the Marinade
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 teaspoon zest of lemon zest from the same lemon
  • 1 teaspoon honey optional for sweetness
  • 1/4 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Shrimp Skewers
  • 1.5 pounds large shrimp peeled and deveined
  • 8 skewers wooden or metal skewers if using wooden, soak in water for 30 minutes

Method
 

Marinating the Shrimp
  1. In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, honey, chopped basil, minced garlic, salt, and black pepper until well combined.
  2. Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes, or up to 1 hour for more flavor.
Grilling the Shrimp
  1. Preheat the grill to medium-high heat (about 400°F).
  2. Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
  3. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  4. Remove from the grill and let rest for a few minutes before serving.

Notes
