Marinating the Shrimp
- In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, honey, chopped basil, minced garlic, salt, and black pepper until well combined.
- Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes, or up to 1 hour for more flavor.
Grilling the Shrimp
- Preheat the grill to medium-high heat (about 400°F).
- Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
- Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove from the grill and let rest for a few minutes before serving.
Notes
Serve the grilled shrimp skewers with a side of fresh salad or grilled vegetables for a complete meal. You can also garnish with additional basil leaves and lemon slices for presentation. If you prefer a spicier kick, consider adding a pinch of red pepper flakes to the marinade.
