Brighten up your summer with this zesty Summer Pasta Salad! Packed with fresh veggies, herbs, and a tangy dressing, it’s the perfect dish for picnics, BBQs, or a light lunch.

Ingredients
  

  • 8 oz of your favorite pasta
  • 1 cup of cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/2 cup of your favorite cheese cubed (we recommend mozzarella)
  • 1/4 cup of red onion finely chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp vinegar
  • 1 tbsp mustard
  • salt and pepper to taste.

Instructions
 

  • Cook the pasta according to package instructions. Rinse under cold water to cool.
  • Combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, cheese, and red onion in a large bowl.
  • In a separate bowl, whisk together the dressing ingredients.
  • Pour the dressing over the pasta salad and toss until well coated.
  • Refrigerate for at least 30 minutes before serving. Enjoy!
