Ingredients
Method
Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
Slice the Zucchiniv
- Using a mandoline or sharp knife, slice the zucchinis into thin, even rounds (about 1/8 inch thick).
- The thinner the slices, the crispier the chips will be.
Prepare the Coating
- In a small bowl, combine the grated Parmesan cheese, breadcrumbs (if using), garlic powder, paprika, salt, and pepper.
- Mix until evenly combined.
Coat the Zucchini
- Place the sliced zucchini rounds in a large bowl and drizzle with olive oil.
- Toss to coat.
- Then, dip each zucchini slice into the Parmesan mixture, pressing gently to adhere the coating.
- Arrange the coated slices in a single layer on the prepared baking sheet.
Bake the Zucchini Chips
- Bake in the preheated oven for 25-30 minutes, or until the zucchini chips are golden brown and crispy.
- Keep an eye on them, as the baking time may vary depending on the thickness of the slices.
Serve
- Remove the zucchini chips from the oven and let them cool slightly.
- Garnish with fresh parsley, and enjoy them as a snack, appetizer, or side dish!

Notes/Advice:
- Additions/Subtractions:
- If you want extra crispy chips, slice the zucchini as thinly as possible and avoid overcrowding the baking sheet.
- You can easily adjust the seasoning to your preference—add more garlic, herbs, or spices to suit your taste.
- For an even healthier version, skip the breadcrumbs and just use Parmesan cheese and seasoning.
