  • 2 medium zucchinis thinly sliced (about 1/8 inch thick)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs optional for extra crunch
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper to taste

Method
 

Preheat the Oven
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
Slice the Zucchiniv
  1. Using a mandoline or sharp knife, slice the zucchinis into thin, even rounds (about 1/8 inch thick).
  2. The thinner the slices, the crispier the chips will be.
Prepare the Coating
  1. In a small bowl, combine the grated Parmesan cheese, breadcrumbs (if using), garlic powder, paprika, salt, and pepper.
  2. Mix until evenly combined.
Coat the Zucchini
  1. Place the sliced zucchini rounds in a large bowl and drizzle with olive oil.
  2. Toss to coat.
  3. Then, dip each zucchini slice into the Parmesan mixture, pressing gently to adhere the coating.
  4. Arrange the coated slices in a single layer on the prepared baking sheet.
Bake the Zucchini Chips
  1. Bake in the preheated oven for 25-30 minutes, or until the zucchini chips are golden brown and crispy.
