Ingredients
  

Cinnamon and Honey Baked Apples
  • 4 medium apples Honeycrisp, Granny Smith, or your favorite baking apple
  • 1/2 cup rolled oats
  • 1/4 cup chopped walnuts or pecans optional, for crunch
  • 2 tbsp melted butter or coconut oil
  • 3 tbsp honey or maple syrup for a vegan option
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • A pinch of salt

  • Greek yogurt or vanilla ice cream
  • A drizzle of extra honey or maple syrup
  • Extra cinnamon for dusting
Substitutions

Method
 

Preheat the Oven
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a baking dish that will fit your apples snugly.
Prepare the Apples
  1. Core each apple, creating a hollow center, but leave about 1/2 inch at the bottom to hold the filling.
  2. If desired, peel the top half of each apple to prevent the skins from bursting while baking.
Make the Oat Filling
  1. In a medium bowl, mix together the rolled oats, chopped nuts (if using), melted butter or coconut oil, honey, cinnamon, nutmeg, and a pinch of salt until the mixture is well combined.
Stuff the Apples
  1. Spoon the oat mixture into each apple, pressing down gently to pack it in.
  2. Place the stuffed apples in the prepared baking dish.
Bake the Apples
  1. Cover the baking dish loosely with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the apples are tender and the oat topping is golden and bubbling.
Serve
