Ingredients
  

  • 2 lbs baby potatoes Yukon Gold or red potatoes, halved
  • 3 tbsp olive oil
  • 2 tbsp truffle oil white or black
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Potatoes: In a large bowl, toss the halved potatoes with olive oil, minced garlic, thyme, salt, and pepper. Ensure the potatoes are evenly coated with the mixture.
  3. Roast the Potatoes: Spread the potatoes in a single layer on the prepared baking sheet, cut side down. Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy, tossing them halfway through the cooking time to ensure even browning.
  4. Add Parmesan and Truffle Oil: Remove the potatoes from the oven and immediately drizzle them with the truffle oil. Sprinkle the freshly grated Parmesan cheese over the top, tossing the potatoes gently to coat them evenly.
  5. Garnish and Serve: Transfer the Parmesan-truffle potatoes to a serving dish and garnish with fresh parsley. Serve hot and enjoy!
