Ingredients
  

  • 2 large eggs
  • 1 cup fresh spinach chopped

Method
 

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the chopped spinach to the skillet and cook for 2-3 minutes, or until the spinach begins to wilt.
  3. In a bowl, crack the eggs and whisk them with a fork until well-beaten. Add a pinch of salt and pepper, if desired.
  4. Pour the beaten eggs over the spinach in the skillet. Let the mixture cook for a minute before gently stirring it to scramble the eggs.
  5. Continue cooking and stirring the eggs and spinach until they reach a fully cooked and fluffy consistency, which should take about 2-4 minutes.
