Ingredients
  

For the Cucumber Bites
  • 2 large cucumbers English cucumbers work best
  • 4 oz cream cheese softened
  • 2 tbsp Greek yogurt or sour cream
  • 1 tsp lemon juice
  • 1 tbsp fresh dill finely chopped
  • 1 tbsp fresh chives finely chopped
  • Salt and freshly ground black pepper to taste
Optional Toppings
  • Smoked salmon cut into small pieces
  • Crumbled bacon
  • Cherry tomatoes halved
  • Feta cheese crumbles
  • Red pepper flakes for heat

Method
 

Prepare the Cucumbers
  1. Wash the cucumbers thoroughly and pat them dry. Slice into 1-inch thick rounds.
  2. Use a small spoon or melon baller to scoop out the center of each cucumber slice, creating a small well for the filling. Be careful not to scoop all the way through the bottom.
Make the Filling
  1. In a mixing bowl, combine cream cheese, Greek yogurt (or sour cream), lemon juice, dill, chives, salt, and pepper.
  2. Mix until smooth and creamy.
Fill the Cucumber Cups
  1. Transfer the filling to a piping bag or a resealable plastic bag with the tip snipped off.
  2. Pipe the filling into each cucumber cup, filling generously.
Garnish and Serve
  1. Top each cucumber bite with your choice of garnish—smoked salmon, crumbled bacon, cherry tomato halves, or feta cheese.
  2. Sprinkle with extra dill or red pepper flakes if desired.
