INGREDIENTS:

  • 1 1/2 lbs cottage cheese
  • 1/2 teaspoon baking powder
  • 1 cup all-purpose flour, sifted
  • 2 large eggs
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • Oil for greasing
  • Toppings (optional):
    • Blueberries
    • Honey

DIRECTIONS

  1. In a blender, add cottage cheese and eggs; blend until smooth.
  2. Then add baking powder, all-purpose flour, sugar, and salt; blend once again until smooth.
  3. Heat a nonstick pan over medium heat and add a little oil to it.
  4. Pour about 1/4 cup of batter into the pan and cover immediately.
  5. Cook for 2-3 minutes and then flip and cook for another 2-3 minutes or until golden on both sides.
  6. Repeat until all batter is used.
  7. Top with blueberries and honey. Enjoy!
