Breakfast Egg Muffins

Ingredients

  • Optional add-ins: diced vegetables, cooked bacon, ham, or sausage, or any other ingredients your kids love.

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray or use silicone muffin cups.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Ask your kids to help you choose their favorite add-ins. Encourage them to get creative with their combinations. Some examples include spinach and feta, tomato and basil, or broccoli and cheddar. Chop the ingredients into small pieces and mix them into the egg mixture.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about two-thirds full. Be mindful not to overfill, as the muffins will rise during baking.
  5. Sprinkle the grated cheese evenly over each egg muffin.
  6. Bake for 20-25 minutes or until the egg muffins are firm and golden. Insert a toothpick into the center of a muffin; if it comes out clean, the muffins are done.
  7. Remove the egg muffins from the oven and let them cool for 5 minutes before transferring them to a wire rack to cool completely.
  8. Store leftovers in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. Reheat in the microwave for a quick and delicious breakfast on busy mornings.
