Zucchini and Feta Frittata

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium oven-safe skillet or non-stick frying pan, heat the olive oil over medium heat. Add the sliced zucchini, onion, and minced garlic. Occasionally stir the vegetables and cook them for 5-7 minutes until they soften and lightly brown.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, oregano, and basil. Stir in the crumbled feta cheese.
  4. Pour the egg mixture evenly over the zucchini, onion, and garlic in the skillet.Reduce the heat to low and cook for 2-3 minutes, or until the edges of the frittata begin to set.
  5. Preheat the oven and bake the frittata in the skillet for 15-20 minutes until it cooks through and the top turns golden brown.
  6. Remove the frittata from the oven and let it cool for a few minutes before slicing into wedges. Garnish with fresh parsley or basil, if desired, and serve warm or at room temperature.
